Halloween, which many people celebrate on 31 October, is above all pumpkin season. Pumpkin pie is traditionally baked in North America for Thanksgiving, but in recent years it has become popular in Ukraine too.

The recipe was shared by the outlet The Page.

The pie consists of shortcrust pastry, homemade or ready-made, and a filling of pumpkin purée, eggs, cream and spices: cinnamon, ginger and nutmeg.

What you need

  • peeled pumpkin — 500 g;
  • shortcrust pastry, homemade or ready-made — 250 g;
  • eggs — 2;
  • cream, at least 20% fat — 150 ml;
  • sugar — 100 g;
  • ground cinnamon — 1 tsp;
  • ground ginger — ½ tsp;
  • ground nutmeg — ¼ tsp;
  • salt — a pinch;
  • starch or semolina — 1 tbsp.

How to make it

1. Make the purée. Cut the pumpkin into small pieces, roast in the oven until soft or steam it, then blend into a purée.

2. Make the filling. Separately whisk the eggs with the sugar until lightly foamy, add the cream, spices, salt and starch. Combine with the pumpkin purée and mix thoroughly until smooth.

3. Line the tin. Roll out the pastry, line the tin with it and form the sides. You can sprinkle a little semolina on the base so the filling does not make it soggy.

4. Add the filling. Pour the pumpkin mixture into the tin and level it.

5. Bake. Bake at 180 °C for about 40–45 minutes, until the filling has set and the edges of the pastry are golden.

6. Cool. Let the pie cool completely — then the texture becomes tender and the flavour richer.

Before serving, the pie can be topped with whipped cream, dusted with cinnamon or drizzled with caramel sauce. It is good both warm and chilled.

As a reminder, this week we already used pumpkin in a millet porridge with honey.
