Saturday is a day when breakfast can be made at a leisurely pace. These syrnyky with dried apricots suit those who want to skip the frying pan and extra oil.
The recipe for syrnyky with dried apricots was shared by the Ukrainian cooking site Smak.menu.
The apricots are soaked and blended with the curd cheese, and the mixture rests in the fridge overnight. It thickens, so the syrnyky hold their shape better and bake in the oven.
What you need
Serves 2:
- curd cheese, 250 g (50 g of it for the sauce);
- dried apricots, 40 g;
- egg, 1;
- vanilla sugar, 6 g.
For the sauce:
- curd cheese, 50 g (or yoghurt or kefir);
- water, 2 tbsp;
- sweetener and vanilla sugar, to taste;
- lemon juice, to taste.
How to cook
1. Soak the apricots. In the evening cover the dried apricots with cold drinking water for 30–60 minutes to soften.
2. Blend the mixture. Drain the water. Blend the apricots with the curd cheese (except 50 g for the sauce), the egg and vanilla sugar.
3. Chill. Put the mixture in the fridge overnight to thicken.
4. Shape the syrnyky. Spoon the mixture onto baking paper or into silicone muffin moulds, which help if the mixture is a little runny.
5. Bake. Bake in an oven preheated to 180 °C until golden.
6. Make the sauce. Mix the remaining curd cheese with water, sweetener, vanilla sugar and lemon juice.
Serve the syrnyky warm with the sauce.
